The Moffat P12M 28-7/8" Turbofan Electric Proofer and Holding Cabinet is one of the best proofers on the market.
Made of an easy to clean stainless steel on both the outside and inside, the body of the P12M features a double skin construction. While a fan distributes air evenly throughout the proofer, you are able to adjust humidity and temperature via mechanical controls. It can hold up to twelve full-size sheet pans and features a reversible side-hinged door. Mounted on both rigid and swivel castors, the P12M features a wheel lock to ensure it stays where you put it.
